 Echigo Beer will release a limited-time craft beer, "Citrus Strata IPA," starting on April 21. The beer features two types of hops with a floral aroma and has a taste that is easy to drink even for beginners. The style of the beer is called "Session IPA," which has become popular in recent years, as it is less bitter and has a lower alcohol content than the strong bitter taste of India Pale Ale (IPA). The hops used in this beer are both American-grown, with "Citrus" providing a citrus-like aroma and "Strata" a tropical flavor. While hops are typically added during the boiling process of the wort before fermentation to extract bitterness, in this case, dry hopping was done twice after fermentation to enhance the aroma of the hops while suppressing the bitterness. Fukushima University's Fermentation and Brewing Research Institute has developed a limited edition junmai ginjo sake

 Fukushima University's Fermentation and Brewing Research Institute has developed a limited edition junmai ginjo sake called "Shokunogakurui Ichi", which is now available for purchase. The sake has a refreshing muscat-like aroma and a sharp taste. Director Miki Matsuda and others from the institute announced the completion of the sake at a press conference on the university campus on April 12th. The institute formed a collaborative team with Mirai Nougyou, and has been conducting research and development on sake-making suitable for the climate and soil of Fukushima Prefecture since 2021. They selected strains of rice that mature earlier from the Yamada Nishiki variety, and improved the rice through breeding. Last year, using rice harvested from Mirai Nougyou's fields, Suzuki Shuzo in Namie-cho brewed the sake, which was completed in March of this year.
