Fukushima University's Fermentation and Brewing Research Institute has developed a limited edition junmai ginjo sake
Fukushima University's Fermentation and Brewing Research Institute has developed a limited edition junmai ginjo sake called "Shokunogakurui Ichi", which is now available for purchase. The sake has a refreshing muscat-like aroma and a sharp taste. Director Miki Matsuda and others from the institute announced the completion of the sake at a press conference on the university campus on April 12th.
The institute formed a collaborative team with Mirai Nougyou, and has been conducting research and development on sake-making suitable for the climate and soil of Fukushima Prefecture since 2021. They selected strains of rice that mature earlier from the Yamada Nishiki variety, and improved the rice through breeding. Last year, using rice harvested from Mirai Nougyou's fields, Suzuki Shuzo in Namie-cho brewed the sake, which was completed in March of this year.
"Shokunogakurui Ichi" is limited to 400-500 bottles, priced at 1,500 yen for a 720 ml bottle. It is available for purchase at the university's cooperative store, and purchase procedures can also be completed on the cooperative's website.
